Tortellini With Tomato Cream Sauce

  1. In a large pot of boiling salted water, cook pasta.
  2. Drain.
  3. Meanwhile, in a large heavy saucepan over medium heat, boil cream, stirring, until reduced by about half, 5-6 minutes.
  4. Add tomato paste and whisk until blended.
  5. Drain tortellini and add to cream sauce.
  6. Toss gently and serve sprinkled with parsley.
