Banana Nut Oat Bran Muffins Recipe

  1. Oil 12 muffin c. (2 1/2 inches wide), or possibly line with paper baking c..
  2. Grate 1 Tbsp.
  3. peel (orange part only) from orange.
  4. Cut oranges in half and ream juice.
  5. Measure 1/2 c. juice; save remainder for other uses.
  6. In a large bowl, combine orange peel, orange juice, 2 Tbsp.
  7. oil, Large eggs, bananas, honey, and brown sugar.
  8. Stir to mix well.
  9. In a small bowl, mix cereal, baking pwdr, salt, and walnuts.
  10. Add in to egg mix and stir till proportionately moistened.
  11. Spoon batter equally into muffin c..
  12. Bake muffins in a 400 degree oven till golden, 20 to 25 min.
  13. Run a knife between muffins and c. sides, invert pan to remove muffins, and set muffins upright on a rack.
  14. Serve warm, hot, or possibly at room temperature.
  15. This recipe yields 12 muffins.
