Barbie Poke Cupcakes
- 1 pkg. (2-layer size) white or yellow cake mix
- 1 cup boiling water
- 1 pkg. (4-serving size) JELL-O Very Berry BarbieT Flavor Gelatin
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
- Prepare cake mix as directed on package.
- Spoon batter into paper-lined muffin pan, filling each cup 1/2 full.
- Bake as directed on package.
- Cool cupcakes in pan on wire rack 15 minutes.
- Pierce cupcakes with large fork at 1/4-inch intervals.
- Stir boiling water into gelatin in small bowl at least 2 minutes until completely dissolved.
- Spoon evenly over cupcakes.
- Refrigerate 3 hours.
- Frost with whipped topping.
- Decorate as desired.
- Store cupcakes in refrigerator.
