Wild Mushroom Bisque

  1. In a large saucepan, melt butter.
  2. Add mushrooms and shallots and cook over medium heat, stirring frequently until softened, about 5 minutes.
  3. Raise heat to high and whisk in condensed mushroom soup, beef broth, and half and half.
  4. Bring to a boil, reduce heat to medium low, and simmer uncovered for 5 minutes.
  5. Just before serving, stir in sherry and season with pepper.
