Beef Pot Roast Recipe
- 1 tbsp. shortening
- 4 lbs. beef pot roast
- Salt to taste
- Pepper to taste
- 1 med. onion, chopped
- 1 bay leaf
- 1 c. water
- Heat pressure-cooker and add in shortening.
- Brown roast well on all sides.
- Season with salt, pepper, onions and bay leaf; add in water.
- Close cover securely.
- Place pressure regulator on vent pipe and cook 35 min, with pressure regulator rocking slowly.
- Let pressure drop of its own accord.
- Thicken gravy, if you like.
