Mizuna Greens with Sesame Seeds

  1. Carefully wash the mizuna and trim the stem ends.
  2. Cook in boiling water with a pinch of salt for 2 minutes.
  3. Submerge the mizuna in cold water.
  4. Squeeze the excess liquid and cut into 4-5cm lengths.
  5. Put the sesame seeds in a suribachi (Japanese mortar) and grind.
  6. Add the sugar and soy sauce and combine.
  7. Toss in the mizuna leaves and mix to coat evenly.
