Roasted Potatoes, Butternut Squash and Chicken Sausage
- 3 Large Red Bliss Or New Potatoes
- 1 Large Sweet Potato
- 1 Small Butternut Squash
- 1 Medium Onion Peeled And Quartered, Layers Separated
- 2 cloves Garlic, Chopped
- 2 teaspoons Extra Virgin Oilve Oil
- 1 teaspoon Fresh Or Dried Rosemary
- 1 teaspoon Italian Seasoning
- 1/2 teaspoons Garlic Powder
- Kosher Salt And Freshly Cracked Black Pepper To Taste
- 1 pound Italian Chicken Sausage, Each Link Cut Into 6 Slices
- Preheat oven to 375 degrees F.
- Cut red potatoes into 1 inch pieces, peel the sweet potato and the squash (cleaning as well) and cut them into 1 inch pieces.
- Add to a large mixing bowl.
- Add the onion, garlic, olive oil, rosemary and Italian seasoning, garlic powder, salt and pepper combining well.
- Place on a parchment lined baking sheet (use a rimmed baking sheet), using the parchment to prevent sticking.
- Add the sausage to the baking sheet with the potatoes and vegetables and bake, tossing once or twice for 25-35 minutes, or until your potatoes are cooked through.
- Cooking time will vary depending on the thickness of your potatoes and sausage, keep an eye so they dont burn.
