Old Fashioned Cornbread Dressing
- 2 c. cornmeal
- 1 tsp. baking soda
- 2 eggs, beaten
- 2 Tbsp. bacon drippings, melted
- 1 medium onion, chopped
- 6 slices day old bread
- 1 c. milk
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. baking powder
- 1 tsp. salt
- 2 c. buttermilk
- 3 stalks celery, chopped
- 2 Tbsp. butter or margarine
- 2 to 2 1/2 c. chicken broth
- 2 eggs, beaten
- 1 tsp. poultry seasoning
- Combine cornmeal, baking powder, baking soda and salt in a large mixing bowl.
- Add 2 eggs, buttermilk and bacon drippings. Mix well.
- Place a well-greased 10-inch cast-iron skillet in oven at 450u0b0 for 4 to 5 minutes or until hot.
- Pour batter into skillet. Bake at 450u0b0 for 35 minutes or until lightly browned.
- Cool and crumble cornbread into large bowl.
