Begun Bahaar (spicy Eggplant or Aubergine)
- 5 each Small Egg Plant
- 1 Onion chopped
- 1/2 tsp Ginger Chopped
- 1/2 tsp Garlic chopped
- 2 Sour Tomatoes
- 2 tbsp Mustered paste or Mustered sauce
- 2 Green chilli
- 1/2 tsp Turmeric powder
- 1/2 tsp Red chilli pdr
- 2 tbsp Mustered oil or any white oil
- 1/2 tsp Sugar (optional)
- 2 tbsp Cilantro for garnishing
- Cut the eggplant in lengthwise till top of the crown... not whole.. Keep top of egg plant as it is.
- As pics showing.
- Wash it n now heat one tbs oil in a heavy bottom pan...
- When oil smoke fully add eggplant .
- Sprinkle lil bit salt..
- This make salty eggplant as when we fry the eggplant it sealed the upper skin.
- Fry eggplant till lil brown.. Keep out n keep aside.
- Now heat remaining oil.. After smoke oil.. Add garlic chopped.. Let lil bit golden colour now add chopped onion.. Let it transparent... Add ginger chopped.. Fry for two minutes.
- Now add mustered paste or Mustered sauce.. Add tomatoes.. (u can cut tomatoes into pieces or not.. Its ur choice..
- I didn't cut into pieces.. Just gave four cut mark.
- Now add fried eggplants.. Add salt, turmeric n red chilli pdr.
- Stir continuously.. Do flame low.. Keep the lid.. Cook till eggplants get soft completely.
- Now open the lid n add sugar.. Its totally optional.. Sugar balance the tangy ness of tomatoes.
- Take out.. Sprinkle coriander leaves...
- Mustered Paste recipe.. Take two tbs mustered seeds.. Wash it n grind with two green chilli, salt n four tbs water.. U get a smooth paste....................... U can use mustered sauce too.. Then avoid to use sour Tomatoes.
