Honey Vanilla Oat Bran Muffins Recipe
- 2 1/4 c. oat bran
- 2 teaspoon baking pwdr
- 1 teaspoon each baking soda & cinnamon
- 1/2 teaspoon nutmeg
- 1/4 c. each raisins & minced nuts
- 1 (8 ounce.) container low-fat vanilla yogurt
- 6 tbsp. honey
- 2 egg whites
- 2 tbsp. vegetable oil
- 1 teaspoon vanilla extract
- Preheat oven to 425 degrees.
- Combine dry ingredients in large mixing bowl.
- Stir in raisins and nuts till well coated.
- Combine liquid ingredients with dry ingredients just till moistened.
- Divide batter proportionately between twelve paper c. lined muffin c.. Bake 15 to 18 min, or possibly till wooden pick inserted in center comes out clean.
- Serve hot or possibly cool.
