Cranberry-Orange Bars
- 1 cup finely chopped cranberries
- 2 oranges, ground skins and pulp
- 12 cup raisins, dark or 12 cup golden raisin
- 14 cup brown sugar
- 13 cup margarine
- 2 eggs
- 1 teaspoon vanilla
- 1 cup whole wheat flour
- 1 cup unbleached white flour
- 2 teaspoons baking powder
- * substitutions = 2 cups whole fresh or frozen berries instead of 1 cup chopped.
- ** substitutions = 2 T fructose instead of brown sugar
- Combine the cranberriess, oranges, raisins and brown sugar in a mixing bowl.
- Set aside.
- Cream margarine until light and fluffy.
- Add 1 egg at a time and beat well.
- Blend in vanilla.
- Gradually add the flours and baking powder to the creamed mixture.
- Stir in the cranberry mixture and pour the batter into a greased 13-x-9-inch baking pan.
- Bake in a 350 F oven for 30 to 40 minutes, or until browned on top.
- Cool in the pan on a wire rack.
- Cut into 24 bars.
