Pumpkin Spice Bread
- 2 cups flour
- 2-1/2 tsp. CALUMET Baking Powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. pumpkin pie spice
- 2 eggs
- 1/3 cup oil
- 1/3 cup brewed strong MAXWELL HOUSE Coffee, cooled
- 1 cup canned pumpkin
- 3/4 cup packed brown sugar
- 1/2 cup powdered sugar
- 1 Tbsp. brewed strong MAXWELL HOUSE Coffee, cooled
- Heat oven to 350 degrees F.
- Mix first 5 ingredients; set aside.
- Beat eggs, oil and 1/3 cup coffee in large bowl.
- Add pumpkin and brown sugar; mix well.
- Stir in flour mixture until well blended.
- Pour into 9x5-inch loaf pan sprayed with cooking spray.
- Bake 50 min.
- to 1 hour or until toothpick inserted in center comes out clean.
- Cool in pan 10 min.
- Meanwhile, mix powdered sugar and 1 Tbsp.
- coffee.
- Drizzle glaze over warm bread.
- Cool bread completely.
