Sauted Crotalus (Rattlesnake)

  1. Remove head, skin and entrails.
  2. Cut into 2 inch long pieces.
  3. Marinate for 3 hours in a mixture of the orange juice, peppercorns and nutmeg.
  4. Drain , wipe dry.
  5. Season with salt and pepper.
  6. Dip in beaten egg.
  7. Roll in dry bread crumbs.
  8. Fry in butter.
  9. Serve hot.
