Sig's Crab Cups
- 12 cherry tomatoes on the vine or 4 good flavoured larger tomatoes on the vine
- 175 grams best cooked crabmeat
- 1 tsp dried tarragon or two teaspoon fresh tarragon
- 1 pinch cayenne pepper
- 1 pinch salt or salt substitute
- 1 squeeze of lemon juice
- 2 tbsp homemade or bought mayonnaise
- sit the tomatoes on the stem end and slice the top off .
- empty out the seeds with a spoon leaving a nice deep cup
- mix all the other ingredients and fill the tomato cups with mixture.
- fill each tomato with some of the mixture
- add the top and chill for an hour then serve .
