Boboli Pizza With Garlic, Peppers And Goat Cheese Recipe

  1. Preheat oven to 450F.
  2. Heat extra virgin olive oil in a heavy large skillet over medium-low heat.
  3. Add in sliced onion and garlic and saute/fry till very soft, about 20 min.
  4. Add in sliced bell peppers and saute/fry 5 min.
  5. Fold in dry crushed red pepper.
  6. Season with salt and pepper.
  7. Place Boboli on a pizza pan or possibly cookie sheet.
  8. Tip skillet so oil accumulates at one side.
  9. Brush Boboli with oil in skillet.
  10. Top with onion-pepper mix.
  11. Sprinkle with cheese and thyme.
  12. Bake till cheese melts, about 12 min.
  13. Cut into wedges and serve.
