Boboli Pizza With Garlic, Peppers And Goat Cheese Recipe
- 1/4 c. Extra virgin olive oil
- 1 lrg Red Onion, thinly sliced
- 6 lrg Garlic Cloves, thinly sliced
- 1/2 lrg Red Bell Pepper, thinly sliced
- 1/2 lrg Yellow or possibly Green Bell Pepper, thinly sliced
- 1/4 tsp Dry Crushed Red Pepper Salt Pepper
- 16 ounce Boboli (baked cheese pizza crust)
- 5 ounce Soft Goat Cheese, crumbled
- 1 Tbsp. Fresh Thyme Leaves, or possibly
- 1 Tbsp. Dry Thyme Leaves, crumbled
- Preheat oven to 450F.
- Heat extra virgin olive oil in a heavy large skillet over medium-low heat.
- Add in sliced onion and garlic and saute/fry till very soft, about 20 min.
- Add in sliced bell peppers and saute/fry 5 min.
- Fold in dry crushed red pepper.
- Season with salt and pepper.
- Place Boboli on a pizza pan or possibly cookie sheet.
- Tip skillet so oil accumulates at one side.
- Brush Boboli with oil in skillet.
- Top with onion-pepper mix.
- Sprinkle with cheese and thyme.
- Bake till cheese melts, about 12 min.
- Cut into wedges and serve.
