MOCHA ROLL
- 1 cup sifted cake flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3 eggs
- 1 cup sugar
- 1/3 cup water
- 1 tsp vanilla
- Grease jelly roll pan and line with brown paper.
- Sift together first three ingredients.
- Set aside.
- Beat the eggs in a bowl until very thick and lemon-colored.
- Gradually beat sugar.
- Blend water and vanilla.
- Slowly mix in dry ingredients to egg mixture just until batter is smooth.
- Pour into prepared pan.
- Bake at 375AF.
- for 12 to 15 minutes or until top springs back when lightly touched.
- Loosen edges and immediately turn upside down on a towel sprinkled with sugar.
- Carefully remove paper.
- Trim off any stiff edges (scissors are easiest for this).
- While cake is still hot, roll cake in towel sprinkled with sugar.
- Cool.
- Unroll again.
- Spread Mocha filling, roll.
- You can cut into 1-inch slices.
- for Mocha filling: Cream 1/2lb.
- butter until light and fluffy.
- Add 2 cups powdered sugar alternately with 2 tbsps.
- milk and 3 tbsps.
- strong coffee.
- Blend well.
- Mix chopped cashew nuts if desired.
