Creamy Cheese Sauce for Pasta
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 14 teaspoon crushed red pepper flakes
- 12 cup rehydrated sliced sun-dried tomato
- 12 cup pasta water (reserve this after the pasta has been cooked and drained)
- 2 tablespoons grated fresh parmesan cheese
- 12 cup low-fat ricotta cheese (Figro recommended)
- 13 cup reduced-fat goat cheese
- 2 tablespoons diced prosciutto
- 2 tablespoons minced parsley
- kosher salt
- fresh ground black pepper, to taste
- cooked pasta
- Heat the oil over medium-high heat in a large skillet.
- Add the garlic, crushed red pepper, sun-dried tomatoes, and pasta water.
- Add the Parmesan, ricotta, goat cheese, and prosciutto to a large bowl.
- Add in the garlic-tomato mixture.
- Add the parsley, and season with salt and pepper.
- Toss with cooked pasta.
