Chocolate Financiers
- 2 medium Egg white
- 65 grams Sugar
- 20 grams Cake flour
- 8 grams Cocoa powder
- 25 grams Almond flour
- 50 grams Butter
- 1 Cacao nibs
- Prepare beurre noisette (slightly browned butter).
- Put the butter in a pot on medium heat.
- When bubbles form and the popping sounds stop, turn the heat off.
- Strain.
- Try not to put the burnt bits of butter into the bowl.
- Cream the egg whites and sugar in a bowl.
- Stir well as if to dissolve the ingredients together, but try to foam up the mixture.
- Sift the flour, cocoa powder and almond flour together and add to the bowl.
- Add the browned butter and mix in.
- The batter is done.
- Fill the financiers cups 80% full.
- Sprinkle in cocoa nibs as you like.
- Bake for 15-18 minutes at 180C.
- They're done!
- I bought cacao nibs at a baking speciality store for 178 yen / 100 g. Cacao beans are aromatic and crunchy like nuts, so I recommend them.
