Canadian Cheese Soup Recipe
- 1/4 c. butter
- 1/2 c. finely diced carrots
- 1/2 c. finely diced onions
- 1/2 c. finely diced celery
- 1 1/2 Tbsp. cornstarch
- 1/4 c. flour
- 1 quart chicken broth
- 1 quart whole lowfat milk
- 1 lb American processed cheese
- 1/8 tsp baking soda salt and pepper to taste
- Heat butter and saute/fry vegetables.
- Add in flour and cornstarch; cook till bubbly, stirring while cooking.
- Slowly add in chicken broth and lowfat milk while stirring.
- Add in soda and cheese.
- Stir till cheese dissolves.
- Add in salt and pepper.
