Simple Chicken Cacciatore
- 2 tablespoons vegetable oil
- 4 each chicken breast halves, boneless, skinless
- 1 x salt and black pepper to taste
- 1 medium onions sliced
- 16 ounces spaghetti sauce jarred
- 8 ounces spaghetti freshly cooked
- 1 x parmesan, parmigiano-reggiano cheese, grated to taste
- 1 x parsley leaves fresh chopped
- Heat oil in heavy medium sized skillet over medium heat.
- Season chicken breast with salt and pepper to taste on both sides.
- Add to skillet and cook until light brown, about 2 minutes each side.
- Remove chicken from skillet.
- Add onion to skillet and saute until beginning to turn translucent, about 5 mintes.
- Stir in spaghetti sauce (add some red wine if you like) and reduce heat to medium-low.
- Add chicken breasts and simmer until no longer pink in the center this will take about 8 minutes.
- Divide spaghetti among plates, place chicken on top and spoon the sauce over the chicken and pasta.
- Sprinkle with grated parmesan and chopped parsley.
