Coconut Quinoa Cookies

  1. Preheat oven to 350F.
  2. Line a baking sheet with silpat or parchment paper.
  3. Add almond butter, maple syrup , banana, yogurt and vanilla in a large bowl and mix until combined.
  4. Add all dry ingredients except for coconut & chia seeds and mix together.
  5. Fold in coconut & chia seeds.
  6. Refrigerate for at least 30 minutes.
  7. Scoop about 2 tablespoons of dough onto the baking sheet and repeat until all dough is used.
  8. Use a wet fork to press down into a small cookie shape.
  9. Bake on center rack for 15 minutes or until edges are golden brown.
  10. Remove and let cool completely.
  11. Enjoy at room temperature or reheated slightly in a microwave.
