Texas Cowboy Pie

  1. Peel and cube the potatoes into uniform sized cubes.
  2. Put potatoes in a pot.
  3. Cover potatoes in water and boil them, uncovered, until soft (this will take 10-20 minutes use your fork to test).
  4. Drain liquid, reserving one cup of the liquid.
  5. Mash the potatotes until no lumps are left, adding potato liquid as necessary to reach your desired consistency.
  6. Stir in sour cream, butter and/or milk as well as salt and pepper, to taste.
  7. Spread warm potatoes in the bottom of an 9x9 pan.
  8. Mix BBQ sauce with leftover shredded beef roast (use as much roast as you like) and layer it on top of the potatoes.
  9. Top with cheese and bake for 15 minutes at 350F.
  10. This is a delicious way to use leftover pot roast!
  11. You wont believe how delicious it is!
