Three Fruit Pie Recipe
- 1 c. crushed pineapple & juice
- 14 dry apricots
- 8 pitted ready to eat prunes
- 1 c. real maple syrup
- 2 tbsp. minute tapioca
- 1 teaspoon butter
- Healthy pinch of cinnamon
- Crust for crust pie
- Stew fruit fold in saucepan over medium heat with the butter till tender.
- Mix the tapioca with the syrup and pour into warm fruit.
- Stir in cinnamon.
- Stew for 10 min longer, stirring constantly.
- Pour into unbaked pie shell.
- Distribute fruit proportionately.
- Cover with top crust and bake in 400 degree oven for about 40 min.
- Cold and serve with unsweetened whipped cream.
