Asparagus Soup

  1. Melt butter in large saucepan over medium heat.
  2. Add onion, salt, pepper and red pepper; cook 5 minutes or until onion is softened.
  3. Add garlic; cook 1 minute.
  4. Add asparagus; cook 5 minutes or until crisply tender.
  5. Add broth; cook over medium heat until mixture just comes to a boil.
  6. Remove from heat; stir in spinach until wilted.
  7. Puree soup using immersion blender or 5-cup blender.
  8. Divide mixture among 4 soup bowls.
  9. Top with shaved asparagus, if desired.
