Armenian Potato Salad Recipe

• 4 med White potatoes
• 1 tsp Salt
• 1 Tbsp. Dry mint
• 1/2 lrg Purple onion, sliced
• 1/4 c. Salad oil
• 1/4 c. Fresh lemon juice

1. Boil potatoes.
2. Slice when cold.
3. Add in all the ingredients.
4. Toss and chill.
