Mint Honeydew Ice

  1. To make simple syrup: Mix water and sugar in a saucepan.
  2. Bring to a boil and then turn heat down to low.
  3. Simmer 3 to 5 minutes or until sugar is completely dissolved.
  4. Allow to cool before proceeding.
  5. Blend the melon, simple syrup, mint, lemon juice and and salt in a blender or food processor.
  6. In batches, if necessary.
  7. Freeze in an ice cream maker according to manufacturer's instructions.
