Mint Honeydew Ice
- 8 cups honeydew melon, cubed
- 1 12 cups fresh mint leaves, lightly packed
- 34 cup water
- 34 cup sugar
- 4 12 teaspoons lemon juice
- 14 teaspoon salt
- To make simple syrup: Mix water and sugar in a saucepan.
- Bring to a boil and then turn heat down to low.
- Simmer 3 to 5 minutes or until sugar is completely dissolved.
- Allow to cool before proceeding.
- Blend the melon, simple syrup, mint, lemon juice and and salt in a blender or food processor.
- In batches, if necessary.
- Freeze in an ice cream maker according to manufacturer's instructions.
