Asian Spaghetti With Cucumber And Spicy Peanut Sauce Recipe
- 1/4 c. Smooth peanut butter
- 1 Tbsp. Soy sauce
- 1 Tbsp. Fresh lemon juice
- 1 x Clove (small) garlic, chopped
- 1/4 tsp Dry warm pepper flakes, or possibly to taste
- 1/4 tsp Sugar
- 1/4 c. Warm water
- 6 ounce Spaghetti
- 1 x Cucumber, peeled, halved, seeded, cut diagonally into 1/8" slices
- 1/3 c. Thinly sliced scallion Salt and pepper, to taste
- Use a blender to mix peanut butter soy sauce, lemon juice, garlic, pepper flakes, sugar and water till the sauce is smooth.
- In a kettle of boiling salted water, boil the spaghetti till it is just tender.
- Drain and rinse briefly under cool water.
- Drain well, transfer to a bowl.
- Toss with the sauce, cuke, and scallions.
- S&P to taste.
- Serve the pasta at room temperature.
