Strawberry Shortcake Mini Parfait
- 2 cups JELL-O Vanilla Instant Pudding
- 2 qt. cold milk
- 3/4 cup butter, melted
- 1/2 cup sugar
- 1-1/4 qt. vanilla wafers, chopped
- 2 cups chopped almonds
- 2 qt. fresh strawberries, chopped Safeway 1 lb For $3.99 thru 02/09
- 2 cups prepared whipped topping
- Prepare pudding with milk as directed on package.
- Refrigerate 2 hours or until thickened.
- Meanwhile, mix butter and sugar in large bowl.
- Stir in chopped wafers and nuts.
- Spoon 1/4 cup of the pudding into each of 32 (4-oz.)
- clear plastic cups (or into each of 8 cups for trial recipe).
- Top each with 2 Tbsp.
- of the wafer mixture, 1/4 cup strawberries and 1 Tbsp.
- of the whipped topping.
- Refrigerate until ready to serve.
