Liver with Vegetables
- 1 pound Liver
- 2 Tablespoons Sunflower (or Any Oil You Like Best)
- 1 Carrot, Cut Into Strips
- 1 Sweet Pepper, Diced
- 1 Marrow (A Type Of Gourd Or Squash), Peeled And Diced
- 1 Onion, Cut Into Half-rings
- 1/2 cups Water
- 3 Tablespoons Tomato Paste
- 1 bunch Dill Chopped
- Salt And Black Pepper To Your Taste
- First dice the liver about 1 cm thick.
- Put the liver pieces on an oiled preheated skillet and sear for 10 minutes on low heat, stirring from time to time.
- After 10 minutes, add the prepared vegetables to the skillet in the following order: carrot, sweet pepper, marrow (a type of gourd or squash) and onion.
- Pour in the water, cover and stew on low heat for 10 minutes.
- Add the tomato paste and dill.
- Salt and continue cooking for 5 minutes more.
- Add the black pepper to taste.
