Chicken taco soup
- 1 lb boneless skinless chicken breast
- 1/2 cup of chopped white onions
- 1/2 cup of chopped green onions
- 1 16 ounce can of whole peeled tomatoes
- 1 small can of tomato paste
- 1 can of or-tels tomatoes with green chilis
- 1 jalapeno
- 1 package of powdered ranch dressing
- 1 package of taco seasoning
- 1 15 ounce can of kidney beans
- 2 garlic cloves
- 3/4 cup of cilantro chopped
- 1 small can of black beans
- 1 can of fire roasted corn
- 1/4 teaspoon of ground cummin
- 1 salt and pepper to taste
- 1 keep 3 cups of chicken stock when cooking chicken
- 1 Quarter teaspoon oregano
- 1/2 tsp lime juice
- 1 can green chilli's 5oz.
- Boil chicken let cool then shred it.
- Save chicken stock
- Put 3 cups of the chicken stock and all the ingredients in a big pot.
- Bring to light boil then let it simmer for 30 mins
- Garnish with sour cream green onions shredded cheese
