Crusty Baked Potatoes
- 6 medium red "new" potatoes
- 2 cup plain flour
- 1 tbsp salt
- 1 tbsp pepper
- 1 cup butter
- preheat oven to 325
- peel the potatoes and place them in a large bowl of ice water
- mix flour, salt and pepper in a large bowl.
- you can use more or less salt and pepper.
- just whatever suits your taste
- roll each potato in the flour mixture coating thoroughly
- melt butter in a large skillet (I use cast iron) being careful not to burn it.
- brown the potatoes lightly and evenly in the butter
- transfer the potatoes into a 9 by 13 baking dish.
- be sure to put all the butter and "crispies" in there too.
- cover with aluminum foil and bake about 30-35 minutes.
- remove aluminum foil and continue baking about 25-30 more minutes or until done
- they should be crispy on the outside and soft on the inside
- put them on your plate cut open with a fork and spoon more butter and "crispies from the baking dish
- you could also add some cheddar cheese and bacon bits
