Almond Paste

• 6 ounces almonds ground
• 3 ounces sugar, superfine
• 3 ounces powdered sugar
• 1 teaspoon lemon juice
• 1 each egg yolks
• 1 x almond extract almond essence, few drops

1. To make the almond paste: Sift the ground almonds and sugars together.
2. Add the remaining ingredients, mix well and knead lightly on a board.
