Shrimp ala Portabella
- 1 lb. shrimp, peeled and diveind
- 1 lb. portabella mushroom
- 2 red peppers
- 1 sm. onion
- 2 cloves garlic
- 1/4 cup extra-virgin olive oil
- Pasta of choice
- 1 lb. mozzerella cheese
- Parmesan cheese
- In a large skillet brown finely chopped garlic and onion in olive oil.
- Cook peppers until tender, add sliced mushrooms, add shrimp until cooked.
- Set aside, prepare pasta.
- Combine shrimp mixture and pasta in baking dish.
- Cover with cheeses and bake at 375F for 15-20 minutes.
