Winter Minestrone Soup

  1. Heat oil in a large saucepan or Dutch oven.
  2. Add onions, celery, carrots, and ham.
  3. Saute 10 minutes.
  4. Add water, broth, bay leaves, salt and pepper.
  5. Bring to a boil, reduce heat and simmer, covered, 30 minutes .
  6. Stir in tomatoes, cook until thoroughly heated.
  7. Serve with toated pita bread.
