Cashew Chicken And Snow Peas

  1. Cut chicken into thin strips and season with salt and pepper. Remove stems and strings from snow peas and cut in half diagonally if very large.
  2. Heat 2 tablespoons of the oil in wok or large skillet; add chicken and stir-fry over high heat until just cooked through, about 2 to 3 minutes; remove to plate.
  3. Add remaining 1 tablespoon oil to wok and stir-fry peas over high heat for 1 minute.
  4. Reduce heat to medium and add garlic and cashews.took while stirring for 1 minute.
  5. Return chicken to pan and add chicken broth; simmer about 1 minute until heated through.terves 4.
