Banana Loaf
- 14 cup applesauce
- 34 cup sugar
- 1 12 cups bananas, mashed
- 2 large eggs
- 13 cup low-fat plain yogurt or 13 cup buttermilk
- 1 teaspoon vanilla
- 2 cups flour (I use whole wheat)
- 1 teaspoon baking soda
- 12 teaspoon salt
- 13 cup nuts, chopped
- Preheat the oven to 350, grease a bread pan.
- Beat applesauce and sugar well, add bananas, eggs, yogurt and vanilla.
- Beat until well blended.
- Don't worry about banana lumps.
- Add the flour, baking soda and salt, stir by hand until just combined.
- Add the nuts (or chocolate chips or blueberries) and blend gently.
- Pour batter into pan bake 60 to 70 minutes until the top is springy to the touch.
- Cool in the pan on a wire rack.
