Summer Tortellini Salad

  1. Cook tortellini according to package directions; drain.
  2. Plunge into ice water to stop the cooking process; drain and place in large bowl.
  3. Stir in chicken and next 5 ingredients.
  4. Whisk together mayonnaise, red wine vinegar, and herbes de Provence.
  5. Add oil in a slow, steady stream, whisking constantly until smooth.
  6. Pour over tortellini mixture, tossing to coat.
  7. Stir in salt to taste.
  8. Cover and chill at least 25 minutes.
  9. Garnish, if desired.
