Cheesy Florentine Potatoes

  1. Steam, bake or microwave potato until tender.
  2. Hollow out the centre of the potato, and line with half the cheese.
  3. Top with spinach, the egg and remaining cheese.
  4. Microwave on MEDIUM for 2-3 minutes until egg is cooked and cheese has melted.
  5. Serve.
