Fresh Herb Couscous Salad

  1. In a large bowl, stir together the couscous, walnuts, and salt.
  2. Pour the boiling water over the mixture, stirring to combine.
  3. Let cool for about 15 minutes.
  4. Meanwhile, chop the tomato.
  5. Peel, seed, and chop the cucumber.
  6. Add to the cooled couscous with the remaining ingredients.
  7. Stir together.
  8. Serve at room temperature or cover and refrigerate until needed.
