Rhode Island Red

  1. In a cocktail shaker, muddle 6 of the raspberries.
  2. Add ice and the tequila, Chambord, lemon juice, Simple Syrup and bitters.
  3. Shake well and strain into an ice-filled highball glass.
  4. Top with the ginger beer.
  5. Garnish with the remaining 2 raspberries and the mint sprig.
