Banana Sour Cream Loaf Recipe
- 2/3 c. butter
- 1 1/3 c. sugar
- 2 Large eggs
- 1 1/2 c. smashed banana
- 2 3/4 c. sifted flour
- 1 teaspoon baking pwdr
- 1 teaspoon soda
- 1 teaspoon salt
- 1/2 c. lowfat sour cream
- 1 c. minced walnuts
- Cream butter and sugar till light and fluffy.
- Add in Large eggs and bananas and beat till well blended.
- Sift together flour, baking pwdr, soda and salt.
- Add in alternately with lowfat sour cream to banana mix, stirring just to blend.
- Stir in walnuts.
- Spoon batter into a 9 x 5 x 2 3/4 inch loaf pan that has been greased and floured on the bottom only.
- Bake at 350 degrees for 1 hour and 15 min or possibly till cake tester comes out clean.
- Let stand in pan on rack 20 min.
- Remove from pan.
- Cold thoroughly.
- Wrap in foil or possibly plastic wrap.
