Beet Juice Sauce Recipe

• 2 c. beet juice from about 2 pounds peeled beets
• 3 Tbsp. canola oil
• 1 tsp lemon juice Salt and pepper

1. In a saucepan, bring beet juice to a boil and reduce 50 percent.
2. Remove from heat and whisk in oil in a slow stream.
3. Whisk in the lemon juice and season with salt and pepper
