Baked Stuffed Flounder Recipe
- 1 Tbsp. Extra virgin olive oil
- 1/2 c. Finely diced onion
- 1 x Clove garlic, chopped
- 1/4 c. Chopped celery
- 1/4 c. Chopped carrot
- 1/4 c. Chopped red pepper
- 1/4 tsp Salt, pepper, thyme
- 4 lrg Flounder fillets
- 1 Tbsp. Grated parmesan
- 1 Tbsp. Mayonnaise
- 1/2 tsp Dijon mustard
- 1 Tbsp. White wine
- In medium skillet, heat oil and saute/fry' onion, garlic, celery, carrot, and pepper 5-7 min.
- Sprinkle with salt, pepper, and thyme.
- Spoon equal amounts on each fillet.
- Roll fish to enclose stuffing.
- Lay seam side down in shallow baking dish.
- In small bowl, whisk together parmesan, mayonnaise, mustard and wine.
- Spread over fillets.
- Bake 20 min at 400 degrees.
- Serves 4
