Vickys 'Almost Guacamole' Salad, Gluten, Dairy, Egg & Soy-Free
- 4 little gem lettuce, outer leaves discarded
- 12 baby plum tomatoes, chopped
- 1 red onion, peeled & sliced
- 2 radishes, sliced
- 4 tbsp sweet corn
- 1/4 small cucumber, peeled and sliced
- 1 green chilli
- 2 firm but ripe avocados, destoned, sliced and chopped
- 1 pinch salt
- 3 tbsp extra virgin olive oil
- 1 tbsp lime or lemon juice
- 1/2 tbsp honey or agave nectar
- 1/2 tsp salt
- 1/4 tsp pepper
- Pull off 4 whole leaves from each lettuce and arrange on each plate.
- Chop the remaining lettuce and add to each plate
- Halve then quarter the tomatoes and chop then divide between each plate
- Sprinkle some sliced onion on each serving and add some discs of radish
- Add the cucumber and sweetcorn
- Arrange the chillis around the plates or chop them finely and sprinkle over if nobody minds the extra heat
- Sprinkle a little salt over the avocado cubes then add to the plates and admire how pretty they look lol
- To make the dressing simply put all the ingredients into a screw top jar and shake to combine.
- Add more oil to thin it out if you like
- Spoon a little dressing over each plate and top with a little garlic mayo if desired.
