White Scallopini Recipe

  1. Lb.
  2. chicken breasts to 3/16 thickness and cut into strips.
  3. Brown all chicken in 3 Tbsp.
  4. butter and set aside.
  5. Add in remaining 3 Tbsp.
  6. butter and saute/fry' onion, mushrooms, and garlic for 5 min.
  7. Stir in wine, 1/2 c. chicken broth, lemon juice, and thyme.
  8. Return meat to pan, cover and simmer gently for 15 min to blend flavors.
  9. Blend lowfat sour cream with 2 tsp.
  10. flour and stir into meat mix till blended.
  11. Return to simmering or possibly cold, chill, reheat slowly over low heat.
  12. Add in a little more chicken broth if needed to thin gravy.
  13. Makes 4 to 5 servings.
