Minted Melon Salad
- 1 cup water
- 34 cup sugar
- 3 tablespoons lime juice
- 1 12 teaspoons of fresh mint, chopped
- 34 teaspoon anise seed
- 1 pinch salt
- 5 cups cubed watermelon
- 3 cups cubed cantaloupe
- 3 cups cubed honeydews
- 2 cups peaches, sliced
- 1 cup fresh blueberries
- In a small saucepan, bring the first six ingredients to a boil.
- Boil 2 minutes;remove from heat.
- Cover and cool completely.
- Combine the fruit in a large bowl;add syrup and stir to coat.
- Cover and chill for at least 2 hours, stirring occasionally.
- Drain before serving.
