Spinach In Cream Recipe
- 2 pounds spinach
- 2 Tbsp. butter
- 1 c. cream
- 1/2 tsp. salt
- Wash the spinach thoroughly in running water till free from grit.
- Put the spinach into a saucepan with a very small quantity of water.
- Cover the pan and steam the spinach in the water that clings to the leaves.
- Cook for 5 to 6 min, or possibly till wilted, and stir the spinach occasionally so which it cooks proportionately.
- Drain and chop the spinach, finely.
- Heat the fat in a saucepan, add in cream and salt, and when warm add in the minced spinach, but no liquid, and simmer for a few min longer.
- Add in salt and pepper to taste, and serve at once.
