Bbq Pulled Pork - Crock Pot!

  1. rub spice all over Boston butt, preferably the night before.
  2. wrap in plastic wrap and keep in refrigerator over night
  3. when ready to cook, put the slices of red onion in the bottom of the crock pot.
  4. this will separate the meat from the bottom
  5. mix your water vinegar and liquid smoke and set aside
  6. place your meat in the crock pot on the onion slices
  7. add water mixture on the sides so you don't rinse off your spice rub from the top
  8. set to low, put the top on and let cook for 7 hours
  9. remove from crock pot and set aside
  10. pour rendered juices into a sauce pan and skim the fat
  11. simmer the juice to reduce.
  12. while the juices reduce place the meat back in the crock pot and pull apart with two forks until meat is shredded, remove as much fat as you can and remove the bone
  13. add a pinch of the rub to the meat, add some of the reduced juices, and a little bit of your bbq sauce and set the crock pot to the "keep warm"setting
  14. let stand in the warm crock pot for about an hour.
  15. to bring the flavors into the meat
  16. serve on toasted buns with your favorite side...
  17. I prefer the miniature Hawaiian sweet rolls, and make sliders.
