Spareribs in Black Bean Sauce
- 3 lbs spareribs (cut up)
- 12 cup flour
- 3 tablespoons oil
- 2 tablespoons black beans (soaked in water 2 mins. Drain and mash lightly)
- 3 garlic cloves (minced)
- 2 tablespoons shoyu
- 2 tablespoons oyster sauce
- 1 tablespoon sugar
- 1 (14 1/2 ounce) can chicken broth
- 1 cup water
- 1 chicken bouillon cube
- 14 cup cornstarch
- 14 cup water
- green onion
- cilantro
- Parboil spareribs.
- Rinse and drain well.
- Dredge in flour lightly.
- Heat oil in heavy pan.
- Stir fry black bean mixture.
- Add spareribs and brown.
- Add seasoning while browning spareribs.
- Add broth.
- Bring to boil.
- Cover and simmer for 45 minutes.
- Thicken with cornstarch mixture.
- Garnish.
