R. J. Grunt's Restaurant Herring Salad
- 1 lb herring in wine sauce, drained
- 3 medium cucumbers, peeled, seeded, and sliced
- 12 lb firm ripe tomatoes, seeded and finely chopped
- 2 medium green peppers, seeded and finely chopped
- 1 large onion, finely chopped
- Cut herring into bite sized pieces.
- Place in a large bowl and add the other ingredients and toss well.
- Chill in your refrigerator until ready to serve, then toss again.
